Tiramisù

Ingredients:

Sponge fingers 300g

Sugar - 100g

Fresh eggs 220g

Coffee Condorelli moka 300ml

Mascarpone cheese, cold 500g

Bitter cocoa powder q.b.

Procedure:


To prepare the tiramisu you start from the eggs, which must be very cold: then separate carefully the egg whites from the yolks (1), remembering that for mount the egg whites must not have any trace of yolk. Then whisk the egg yolks with an electric whisk, pouring only half the amount of sugar (2). As soon as the mixture will become light and fluffy (3), and with the whip still in function, you can add the mascarpone, a little at a time, it too cold (4). Incorporated all the cheese you have obtained a thick cream and compact; keep aside (5). Clean very well the whips and passed on to mount the egg whites by pouring the remaining sugar a little at a time (6). You'll have to mount them to the snow stays in place (7); you will get this result when reversing the bowl, the mass will not move. Take a spoonful of the beaten egg whites and pour it in the bowl with the egg yolks and sugar and stir vigorously with a spatula, so stempererete the compound (8). Then proceed to add the remaining egg whites, a little at at a time, stirring very gently from the top to the bottom (9). Once ready, spread a generous spoonful of cream on the bottom of a dish 30x20cm and distributed per well (11). Then soaked for a few seconds, the savoiardi in the cold coffee sweetened to your liking (we added only 1 teaspoon of sugar) (12), first from one side and then the other (13). As distributed the soaked sponge fingers on the cream, all in one direction, so as to obtain a first layer (14) on which you are going to distribute a part of the cream to the mascarpone (15). Also in this case, you'll have to level it carefully so as to have a smooth surface (16). And continue to distribute the soaked sponge fingers in coffee (17), then made another layer of cream (18). Level the surface (19) in the top and dust with the cocoa powder and let it cool in the fridge for a couple of hours (20). Your tiramisu is ready to be enjoyed (21)!
